Roladin

From Edith Parr (This is a Parr family Christmas dinner tradition!)

Ingredients:
2 strips roladin meat per person (butcher will know how to cut roladin strips)
2 bacon slices per person cut up into 1 inch pieces
1 onion diced
1 Tbs. margarine
2-3 beef bullion cubes
corn starch to thicken
salt and pepper to taste

Directions:
1. Lay out strips of meat, add salt and pepper to top.
2. Add one slice worth of bacon and 1 Tbs of onion to each strip of meat and spread evenly.
3. Roll up strips of meat and secure with a toothpick through the middle.
4. Melt margarine in lg frying pan. Brown meat in margarine.
5. Place meat in pressure cooker. Fill pressure cooker up with water until meat is all covered.
6. Add bullion cubes to water.
7. Cook on high until pressure cooker rocks back and forth. Reduce heat and cook for 30 mins more.
8. Remove meat and add corn starch to left over water to thicken into a gravy.
9. Serve over mashed potatoes. Salt and pepper to taste.
