Sweet 'N Sour Baked Chicken


Ingredients: 
1/4 c. butter (scant: meaning just barely or a little less than the desired amount) 
1/2 c. chopped onion 
1/2 c. coarsely chopped green pepper (or any color pepper) 
3/4 c. ketchup     
2 tbsp. vinegar 
1/4 c. firmly packed brown sugar 
1 tbsp. soy sauce 
1/2 tsp. garlic salt 
1/2 tsp. salt 
1/8 tsp. pepper 
Dash ground ginger 
1 c. pineapple chunks, drained (save juice for later) 
2-3 chicken, cut up (or about 5 chicken tenderloins) 

Directions: 
1. Preheat oven to 375 degrees. In medium skillet, heat butter until melted, add onion and green pepper. Cook 5 minutes, stirring.
2. Stir in ketchup, pineapple juice, vinegar, sugar, soy sauce, garlic salt, salt, pepper, and ginger. Cook, stirring constantly until mixture boils. Remove from stove, add pineapple chunks.
3. Arrange chicken pieces in 9"x13"x2" baking pan. Pour sweet 'n sour sauce over all. Bake, covered about 45 minutes, uncover and bake about 30 minutes longer.
