Tater Tot Breakfast Casserole

 Ingredients: 

• 1 lb sausage
• 1 package of bacon, cooked and crumbled (Or use store bought bacon pieces)
• 2 tsp onion powder
• 2 tsp garlic powder
• 10 eggs
• 1/2 cup heavy cream
• 2 cup shredded cheese, divided
• 32 oz bag of tater tots
• Salt and pepper to taste

Directions:

1. Preheat oven to 350 degrees.
2. Cook sausage in a frying pan until cooked through and crumbled. Set aside to cool slightly. 
3. Cook bacon on same frying pan. Chop into small pieces.
4. In a bowl, whisk together eggs, heavy cream and seasonings. Add crumbled sausage, bacon pieces, and one cup of shredded cheese.
5. Gently fold in a few handfuls of tater tots into the egg mixture (About 2 cups).  
6. Spray a 9x13 pan and pour the egg, meat and tater tot mixture into the pan. 
7. Top with the additional cup of shredded cheese. 
8. Neatly arrange the remaining tater tots on top of the casserole.  
9. Spray tater tots with cooking spray.
10. Season generously with salt and pepper.
11. Bake at 350 for 40-45 mins.
